In business since 1725, its signature dish of roast suckling pig (cochinillo asado) is tasty enough to have secured a mention, along with the restaurant itself, in Ernest Hemingway's "The Sun Also Rises". In a further claim to fame, the famous portraitist, Francesco de Goya, worked there as a waiter while seeking entry into the Royal Academy of Fine Arts.
