If longevity is any marker of quality, the Spanish restaurant of Sobrino de Botin, in Madrid, is up there with the best. In business since 1725, its signature dish of roast suckling pig (cochinillo asado) is tasty enough to have secured a mention, along with the restaurant itself, in Ernest Hemingway's "The Sun Also Rises". In a further claim to fame, the famous portraitist, Francesco de Goya, worked there as a waiter while seeking entry into the Royal Academy of Fine Arts.
